Velveeta twist

Tonight I made turkey burgers (cheese burgers) and homemade velveeta Mac and cheese. I say "homemade" because this Velveeta didn't come out the box! I buy the Velveeta block of cheese and cut into cubes. I boil noodles, in this case penne pasta to shake things up, once the noodles are done, pour out the water, add the cheese cubes, milk, butter, salt and pepper and mix on the stove top until all blended. And BAM! Velveeta twist!

I make Turkey burgers instead of beef burgers because my husband and I do not eat red meat! (And I am also allergic to pork) since it is only my husband and I, I only use 1 lb of ground Turkey which I season with adobo, garlic and herb mccormick, and pepper. Soooo tummy! Quick, easy, and mouth watering dinner!

Lunch or dinner!

Today I didn't feel so well so I decided to make something simple so I wouldn't have to be on my feet! So a chicken salad was the first thing that came to mind. I use fresh chicken breasts. I rinse them, season them with adobo, garlic powder, garlic and herb McCormick. I also rub Italian dressing on each side and throw the chicken breasts into the broiler and broil them on each side.

I chop up the chicken and toss it on top of fresh baby spinach, with cucumbers, tomatoes, and crumbled feta cheese. It makes a full meal!

no cooking tonight!

I did not cook last night! I guess you could call me an unfaithful chef but hey, I do have a life! Lol. My husband and I had errands to run, and I had also established that Friday and Saturday my husband would do the cooking so I could have a break. Well long story short we ended up picking something up to take home and eat. Since I don't necessarily care for McDonald's or burger king (or any fast food really) I decided on Panera. I ordered a frontega chicken sandwich, broccoli cheddar soup, and a chocolate duet cookie. I was in heaven! I'm in love with the soup and I don't care how hot it is you can eat it on any day. Eating it definitely makes me want to try a broccoli and cheddar soup recipe. The sandwich would be a little harder to make since I don't have a sandwich maker and of course a panini requires you to grill the sandwich on both sides. But I'm sure I will figure that out when the time comes!
